Tortellini Salad
to die for…(or so they say)

This is my sister Lynnae's recipe and is a great summer salad that has always been a big hit.

Buy two packages of cheese tortellini from the refrigerator case at the store. Put in boiling water for just 2 or 3 minutes. If it starts unfolding, get it out right away and rinse with cold water. I have made this with dried tortellini, and that works too, but it cooks longer and is smaller.

Buy one container of regular pesto sauce, about a cup. Or, if you grow basil, make your own. Mix with one cup of Miracle Whip. That’s all for your
dressing.

1 bunch green onions, sliced.
3 stalks celery, diced.
2 broccoli tops, cut into small little trees.
About a half-head of cauliflower, cut like above.
1 jar marinated artichoke hearts, drained and cut up a bit.
1 sweet red bell pepper, diced.
1 can jumbo black olives, sliced.

Mix all together, mix in dressing, cover and refrigerate 3 hours or more.
