Jim’s Seafood Alfredo
Really good…
3 to 4 cloves garlic, minced up.
Saute in olive oil until they just start to slightly brown.
Cut up 1 big onion, add to garlic.
Dice up 3 stalks celery, add to the above, and saute all until mostly soft.
Cut up one package of sealegs into chunks, about 1 pound, add to above. You can add any other cooked seafood you like, we usually add about a half-pound of cooked medium shrimp. Some of you might be near a seacoast where you can get better stuff than we have here in Central Minnesota, but this is really good and easy with the sealegs.
8 ounces of fettuccini pasta, cook, drain, and rinse with hot water.
Alfredo sauce—1/2 stick margarine, melt in saucepan. Add 1 tbsp of flour, stir. Add a cup of half-and-half slowly, heat but don’t boil. Add 1 cup Parmesan cheese, a little at a time, and stir until creamy.
Mix all together and serve right away.
