Jim’s Naked Bone Ribs
Buy quality lean pork ribs in the amount you want to have and cut ribs into 2-rib sections.
Lay in a baking pan, curved side up, boney side down.
Sprinkle with Lawrey’s seasoning salt on both sides, or a seasoning of your choice.
Add 2 cups of water and cover tightly with foil.
Bake slowly at 325° for 3 to 4 hours, less or more, depending on the
amount of ribs.
Remove ribs from the pan and let cool.
Discard all of the water and fat from the pan and return ribs to pan.
Brush with BBQ sauce and put back in the oven. Keep turning and coating the ribs with sauce every so often. Bake until the moisture of the sauce is gone. This might be another hour or so of baking time.
These just fall off the bone when you touch them with a fork—there’s no need to pick up a bone and chew, because the bones are naked.
Secret BBQ Sauce
1 can Diet Coke (this might be the secret ingredient)
1 can tomato sauce
1 can tomato paste
3 tbsp chili powder
1/2 cup brown sugar
1 tbsp onion powder
1 tbsp garlic powder
1/4 cup Worcestershire sauce
1/4 cup cider vinegar
Salt and pepper to taste
Mix all ingredients in a sauce pan, bring to heat, and simmer slowly while the ribs and cooking and cooling. This is a recipe that you can adjust according to your personal taste, but I think Jim has reached perfection with this sauce…
